Wipe with a barely damp cloth and dry straight away — MDF and standing water are a poor combination, particularly along the edges and around the fold. Use a board rather than cutting directly on the surface, and a trivet under anything hot. Check the hinges and the folding mechanism occasionally and tighten anything that has loosened with use.
